If you are gluten intolerant, you know it’s often hard to find a tasty gluten free snack or sweet. When we set out to create a healthy, delicious, sugar free chocolate, we wanted to make something that everyone could eat and enjoy. That’s why all of our sugar free chocolate is also gluten free. We’ve been providing delicious gluten free chocolate bars and other gluten free sweets for nearly 10 years. Many of our loyal customers are gluten intolerant and are able to enjoy any of our gluten free, sugar free chocolates.

How can chocolate sweetened with Maltitol (derived from wheat) be Gluten Free?

Although the sweetener we use (Maltitol) is derived from wheat, extraction of the sweetener is accomplished by washing out the starch, leaving it gluten free.

Gluten is a protein found in wheat, rye and barley. Gluten intolerance, also called celiac disease, is an extreme sensitivity to the protein gluten. Gluten intolerance is not a food allergy but an autoimmune disease. The body's immune system mistakenly identifies gluten as an attacker protein, leading to inflammation and damage in the small intestine as it seeks to destroy the invader. Damage to the small intestine can occur when a person with gluten intolerance consumes even a small amount of gluten. Typical symptoms include abdominal pain and diarrhea.

The treatment for gluten intolerance is to remove all gluten from the diet. Most Amber Lyn Chocolate products are gluten free (Our Chocolate Covered Pretzels contain gluten). We’re often asked how the sweetener we use, maltitol, which is derived from wheat, can be gluten free. The gluten is washed out with the starch in processing.

A food product is considered gluten free if it has less than 20 ppm (parts per million). Independent testing conducted every six months confirms that Amber Lyn Chocolate contains less than five (5) ppm gluten. (5 ppm is the downward limit of the current testing protocols.)
