Our Sugar Free Chocolate FAQ
WHAT IS THE COCOA CONTENT?
Our dark chocolate has 54% cocoa content, the milk chocolate has 34% and the white chocolate has 31% cocoa content. Because of our high cocoa content, you are able to benefit from the added antioxidant and polyphenols in the chocolate.
DO THE BARS CONTAIN ANY GLUTEN?
All of our chocolate bars are gluten free. Although our Maltitol is derived from wheat, the gluten is extracted through the process of washing out the starch in the wheat. Although our bars are gluten free, our soft center used in the truffles does contain gluten. We use specific procedures of cleanliness to ensure there is no cross contamination between our truffles and the chocolate bars.
WHY DOES THE BAR SHOW SUGARS?
Our milk chocolate now shows sugars as 3g to account for lactose, the naturally occurring sugar in milk.
DO THE BARS CONTAIN PRESERVATIVES?
No. We use no preservatives in any of our products.
WHAT IS THE SHELF LIFE OF THE BARS?
We recommend storing the chocolate bars in a refrigerator. Storing them in this manner will ensure they stay good for at least 12 months.
WHAT ARE NET CARBS?
Net carbohydrates are calculated by taking the total carbohydrates and subtracting fiber and sugar alcohols, or any other "non-impact" carbohydrate. Net carbohydrates are the carbohydrates that actually are absorbed by the body.
WHAT IS MALTITOL?
Maltitol is the sweetener used in Amber Lyn Chocolates. It is a reduced calorie sweetener that has 90% the sweetness of sugar. Maltitol is a member of a family of sweeteners known as sugar alcohols or polyols. In addition, most of the Maltitol on the market today is derived from corn. The Maltitol used in Amber Lyn Chocolates is derived from wheat. Studies show that the wheat based Maltitol reduces any laxative effect that may be experienced after consumption
WHAT ARE THE BENEFITS OF MALTITOL?
There are numerous benefits that warrant the use of Maltitol in the manufacturing of confectionery products:
- It does not promote tooth decay
- It has only 2.1 cal/gram, compare with the 4 cal/gram in sugar
- It is useful in the manufacture of sucrose-free chocolate
- It has been approved by the FDA as GRAS
- It has little or no effect on blood sugar levels

During summer months all of our orders are packed with Cold Ice Gel Packs to ensure they stay cool during shipment. It is important to have your order shipped to an address where the chocolate will be delivered indoors and not left in an outside mail box.
HOW DO I FIND OUT THE ROAD SHOW SCHEDULE?
Our road show schedule is posted here on our website. We strive to keep the schedule as up to date as possible. We recommend that if you are traveling long distances to attend a road show, that you call the warehouse to ensure we are there.
